I

saw a saying that made me smile in a 'knowing' way the other day: “Nothing's ever really lost until your mum can't find it.” Mother's really do have quite super human powers – moving on from the “Where's my: school bag, phone charger, sweat shirt, shoes…?” questions, Mothers also get a bombardment of statements that they are expected to magically, instantly, resolve, such as “Mum I'm hungry, cold, hot, tired…” They are forever expected to know the answer to “When are we…?” “Why are we…?” and “How are we…?” questions. Mothers are obviously on a par with Google when it comes to knowing everything about anything and it's strange how fathers are often quietly sitting in the same room reading the paper. Dads never seem to get the chance to answer the million everyday questions, or show their prowess in solving everyday dilemmas. The biggest question Dads get is “Where's Mum?” Mums not only know plenty, they can also do things that no-one else can. Mums know how to change a toilet roll, hang up towels, get dishes into the dishwasher and not just on the bench or in the sink. They can find things in the fridge and pantry that are invisible to others and they are often the only ones psychic enough to realise a rubbish bin needs emptying. Mothers also have amazing ears – they can hear a sneeze through two closed doors and along a hallway, and they are equally good at hearing a teenager's step on the stairs in the middle of the night. Mums will also do things that no-one in their right mind would bother with. They will make pancakes in the shape of the Taj Mahal and birthday cakes that look like cargo trains, just to see their children smile. They will sit through cheesy movies, work at work and then do a double shift at home, smooth troubled waters and always be positive, optimistic and encouraging. Where in the world would we be without our mothers? Make sure you honour yours this weekend – Sunday 10 May!

hey say if you find a job you love, you’ll never have to work a day of your life. Now I’m not saying that Uli Dinsenbacher, the GM at Porters Ski Area isn’t a hard worker, quite the contrary, but from the outside, it looks like a job that could be a lot of fun to me! Uli is at home in the mountains. He grew up around the ski fields of Bavaria and took up ski instructing and racing at the age of 16. Since then he has spent many years skiing, coaching and instructing in Germany plus North and South America. He arrived in New Zealand in the early ‘80s and met and married a Kiwi girl. He has been working at Porters for over 30 years now – helping develop it into the amazing field it is today. Not surprisingly his two children (young adults) share his passion for the mountains and are keenly involved in skiing. I caught up with Uli to find out a little more about the improvements at Porters and what managing a ski area involves…

Uli Dinsenbacher What was your first job at Porter Heights (since 2007 Porters Ski Area) and when did you become general manager? I was the Ski School Director for three seasons, then became General Manager in 1986. Still here.

You have been at Porters for over 30 years what was the field like in the early days? When I came to Porters, the ski area was fairly basic with limited grooming and rope tows. In the ‘80s we replaced the rope tows with T-Bars, in the early ‘90s we were the first commercial ski area in NZ to install snowmaking, and have gradually improved our infrastructure over the years.

The big news this season is Porters’ fabulous new four-seater chairlift (Easy Rider). Where is it located and have you changed the layout of the field to incorporate it? We located the chairlift loading just a few steps up from the Ticket Office and shifted the whole beginner’s area over to the Platter lift which is on the same level as the car park. This means easy access and an easy progression from beginner to intermediate to advanced lifts and terrain.


What other improvements have you made in the last couple of years? During the last few years we have built a licenced cafeteria in the car park with a big sundeck in front of it, revamped the rentals with the latest state-of-the-art equipment and racking system, introduced an electronic ticketing system and installed a Sunkid Carpet Lift for the beginner skiers.

Porters is the closest ski area to Christchurch, how long does it take to drive there and what are the road conditions and parking like? It takes about 85 minutes from the airport, a bit longer when snow is on the road. Our access road is one of the shortest and easiest in the country and there is a complimentary shuttle service from our chain fitting area on days when chains are required.

Can you tell us about the off-piste runs in the area? There are plenty off-piste areas with untracked powder on our black and double black runs. The signature runs are Big Mama and Bluff Face, one of the steepest and longest in the Southern Hemisphere serviced by a lift.

What is your price point like compared to other South Island ski fields? We have one of the best packages for beginners and families. Other bigger commercial ski areas in the South Island are more expensive than Porters.

How many staff are there during high season and what are their roles?

On a more personal note, what was the proudest moment of your racing career? Quite a few years ago, winning a NASTAR race in Michigan on hire skis and beating a friend of mine who was a competitive instructor and racer.

If you could go back and tell your teenage self something what would it be?

We employ 20 instructors, and 45 seasonal staff, from car parking, lift operation, snowmakers, groomer operators, road clearing and maintenance staff to employees in the ticket office, administration, rentals, café, and ski patrol.

Have a good attitude and be passionate for whatever you do as a job or hobby. If you can combine both job and hobby, even better.

How many skiers are on field on a busy winter’s day with good snow?

Green tea and red wine –not together!

What is your favourite drink? On a busy day we have up to 1200 customers.

Which is your favourite café, restaurant or bar in Christchurch? What are three things you would suggest a beginner should bring up the mountain?

My favourite café in town is the Addington Coffee Co-op, and my favourite coffee is Underground.

A can-do attitude, warm clothing (gloves, hat, sunglasses) and sunblock for the nice days. If you forget any of the latter it can be all purchased or hired on the mountain, and we can certainly help you get on and achieve lots in a day.

What is one thing Metropol readers would be surprised to know about you? I have a master degree in brewing beer.

What do you love about your job?

What are you like at parties?

Being in the mountains and snow, dealing with daily challenges and working with people from all over the world. As well as being able to go for a ski every day.

Depends on the party; I go with the flow.

What are the challenges? The biggest challenges are the factors we can’t control like

What's next on the wish list? Going to the Antarctic from Ushuaia. In the off season I want to ski some more of the top ski areas in the Northern Hemisphere – I am slowly ticking off the list.

INTERNATIONAL THRILLERS How do you solve a murder in a high-security area where no one knows who the other people are or what they're doing there?

T

his is the premise on which Peter Clements has based his latest novel, A Murder at Bletchley Park, which is set during World War 2 at the very secretive home of Britain's codebreakers, and which was also the location for the outstanding recent film, The Imitation Game, which told the story of the pioneering computer scientist Alan Turing, who led the deciphering of the German Enigma code. Murder at Bletchley Park, however, is a fictional story about the investigation of the murder of a woman, although it also successfully recaptures the historical setting and the various levels of intrigue that were going on there at that time. “She's only one casualty in a war in which tens of thousands died. It takes place in the autumn of 1941, the fulcrum of World War 2, when the sleeping giant, America, came into the war,” says Peter. To help understand the principal characters in the book, including the spies, Peter also touches on the rise of fascism under Mosley in Britain before the war, the Spanish Civil War and the beginning of the Cold War. There is also a touch of the British TV series Foyle's War, with the murder being investigated by two Special Branch police officers, one from the East End of London, the other a former policeman in India. “Critics may say that I'm trying to bring too much into it but I'm trying to get

people to understand the circumstances,” he says. Born in Britain, Peter had some experience in this world of intrigue himself during his military service as a young man, working for three years with Royal Air Force Intelligence, which took him to the Middle East and Cyprus. “In Intelligence, you usually don't know what the others are doing or what it's all about. You only do your own little bit. It's so boring. You don't even know the finished product of what you've been doing,” says Peter. Having learned a considerable amount about the behind-the-scenes world of Intelligence at that time, he has kept up that interest ever since, eventually bringing him to writing his latest novel. Peter stresses that the writing of the book was purely coincidental to the release of The Imitation Game, the general rise of interest in Bletchley Park, which has been reopened as a museum, and the English TV series, The Bletchley Circle, about four women code-breakers

Peter was born in England on September 5, 1939, two days after Britain's declaration of war against Germany. His father, who was in the military, took the family to Canada at the beginning of that

Always a traveller, Peter learned to fly as a young adult in Canada, where he also met his wife, Valerie. “I got my commercial flying licence in Canada but couldn't find employment there during the days of the Vietnam War. Valerie and I decided to come to New Zealand in 1966, where I got a job flying for Mt Cook Airlines,” he says. Peter also worked for television during its early days in New Zealand. In the late 1970s, he was the presenter of Free Time on what was then known as South Pacific Television; and made a six-hour programme on the history of aviation in New Zealand, entitled Off the Ground, for National TV. He then went on to make flight-security programmes, commissioned by the Civil Aviation Authority, to be shown to groups like flying schools and helicopter companies. He also appeared in a couple of films in the 1980s. At the age of 50, Peter got a political science honours degree at the University of Canterbury. This led on to studies in peace-keeping at the Lester B. Pearson Canadian Institute in Nova Scotia, which was also attended by Russian, Ukrainian, Guyanian, Lithuanian and Irish Intelligence personnel, as well as a few civilians. The father of two children, with seven grandchildren, Peter is now comfortably settled in the Murray Aynsley Hill area of Christchurch. His other three books are all international thrillers: The Fifth Agenda, about a biochemist in germ warfare; The Third Temple, the history of Israel through the experiences of a family; and a novella, Russian Revenge. MT PLEASANT'S SENSE OF COMMUNITY A sense of community has long been a strong aspect of life in the Mt Pleasant area and that will be strongly reinforced by the magnificent Memorial Community Centre that is to be rebuilt down in the McCormacks Bay Road area.

he new multi-purpose centre's venues for community events, meetings and personal celebrations, will offer something for everyone. With the nearby Avon-Heathcote Estuary as a source of inspiration, the centre's landscape design includes volcanic rock banks, timber decking, exposed aggregate paving and native plantings to reflect the surrounding natural environment. With a ground area of 450sqm and an overall internal floor area of 600sqm, the two-storey building will have a highperformance, lightweight internal structure and external canopy, designed to withstand future earthquakes. “We've got both resource consent and building consent and we're ready to go,” says Derek McCullough, the president of the Mr Pleasant Community Centre and Residents' Association. “It's back to the future for the Mt Pleasant community. To meet the need for a community facility back in 1945, the

residents worked together with the government to establish a memorial centre. “After World War 2, the government had a scheme to help communities build war memorials but the Mt Pleasant community decided a hall would be better than just a stone monument. This was an unusual situation, resulting in our community centre being owned by the community and not the council. “This turned out to be to our advantage because we could move ahead with the replacement of the centre, which was

destroyed by the 2011 earthquakes. We didn't have to wait for council approval of the rebuild. What we needed was the support of the community to make it happen again. “Since 2011, the Mt Pleasant Community Centre and Residents' Association has worked steadily on the project, consulting with the community and raising $3 million through grants and insurance payments. “However, we're still $650,000 short of the replacement cost and so we're inviting everyone to become part of the new centre by becoming a Square Foot Sponsor.” Every sponsor will receive a certificate noting the number of square feet. rriving on Thursday in the late autumn sunshine I was dropped to the Otago museum to attend a behind the scenes tour of their extensive and very well curated clothing collection. Bracelets of human hair, a king penguin muff and a sneaky peek at one of Queen Victoria's nighties kick started my iD experience. Thursday evening was the Emerging Designer Awards where some of the most amazing young designers from around the globe put their collections to the panel of international judges including Doris Raymond from the famed Los

Angeles vintage store 'The Way we Wore' and TV show 'La Frockstars'. Carolyn Enting the associate editor of Mindfood Style, Doris De Pont, Margarita Robertson and Tanya Carlson all iconic NZ fashion designers worked with Doris Raymond to complete the judging panel. The winner Steve Hall from Massey University kept us thinking hard with his collection 'Abandon Man' featuring minimalist clothing with a Japanese and samurai feel to the collection. I'm not sure his male dress will take off here in Christchurch but it was certainly food for thought and the collection beautifully put together. Emerging Designer winner Steve Hall

It is refreshing to see clothing on the catwalk that is available to purchase immediately. I certainly came home with a lighter wallet after seeing what the designers had to oer! Thank you Dunedin. Christchurch's' Debbie Lawson from Deval spared me a few moments to talk me through 'Deval Winter 2015'. Her capsule collection featured strong leather elements and beautiful clean cut tailoring using only the highest quality silk and wool fabrics and construction techniques. A navy and nude colour palette with gold hardware and trim to give it a military edge and modern feel summed up the collection. Highlights were the nude leather trousers and matching top and classic navy jacket. A Deval leather jacket is a must have investment piece and Debbie keeps coming back with new and fresh designs that make you think one is simply not enough... Find Deval in Merivale and at The Tannery. Canterbury born and bred Charmaine Reveley was one of the lynchpin designers in the Friday show – her winter collection 'Halves' featured a signature print of half of each a rose and a chrysanthemum. She also extrapolated this through into her fabric choice by combining heavy and light fabrics in one garment. Her gold and black evening dress was a hit and teamed well with all the signature colours in her collection of raspberry pink and jade. The pink coat is a great buy in either the blanket style or tailored piece. Find Charmaine Reveley at Deval. Perriam a new knitwear label from Wanaka also showed garments that will well suit the Canterbury climate. Christina Perriam the designer experimented with merino leather with great success especially when combined with her luxury merino knitwear. The Perriam Woman Winter 2015 collection features 20 New York inspired pieces that include touches of metallic gold, black on black, prints, paneled arms and pom-pom trims. Winter, and the colder weather it brings, is almost here. A lot of people notice that their skin is dull and dry looking. The changes are due to the cold, harsh environment outside and the warm, dry air inside.

hen your skin is dry it looks older and more wrinkled than it really is. It is the superficial layers of skin that are dry and no matter how much water you drink and how well hydrated you are it doesn't help. Hydra-dermabrasion uses sterile salt water and air at high pressure (it was invented by a Russian rocket- scientist!) to gently exfoliate the dull, dead skin cells from the surface of the skin leaving it looking hydrated and fresh. Another good treatment at this time of

Autumn/winter 2015's interpretation of the '60s does have a unique twist though. It is more about conveying the 'attitude' of that radical and rebellious era, than a full-on reproduction. MINI RAW CHOCOLATE TARTS

Surprising, HEALTHY, delicious Caralee Caldwell, who was a guest at the Christchurch Food Show recently, has a philosophy of only eating 'real foods'. Her blog realfoodpledge.com and recently released cook book Real Food Pledge include some delicious 'real food' recipes. Caralee shares her recipe for Mini Raw Chocolate Tarts with Metropol…

Ingredients Base 1 cup raw cashews 1 cup dried dates 1 cup of shredded coconut (unsweetened) 2 tablespoons cacao powder 1 tablespoon natural maple syrup 2 tablespoons coconut oil (melted) Dash vanilla extract Topping 1 cup medjool dates 1/4 cup coconut oil (melted) Dash vanilla extract Pinch of salt 2 tablespoons cacao powder 1 punnet of raspberries (to garnish)

Instructions 1. To make the base, place all the dry ingredients in the food processor and whizz together until fine and crumbly. 2. Add the maple syrup and coconut oil. 3. Whizz again until the ingredients are combined and sticky when pressed together. 4. Press the mixture into a mini muffin pan tray that holds 24. Fill each muffin case and then place in the fridge to allow to set. 5. To make the chocolate topping, soak the medjool dates in hot water to soak for 10 minutes, to soften the dates. 6. Drain the water from the dates and place the dates along with all the other topping ingredients into the food processor. 7. Whizz together in the food processor until the mixture is smooth. 8. Take the bases out of the fridge and flip them out of the mini pans and place on a serving plate. 9. Top with the chocolate topping and place one raspberry in the centre. Serve immediately or place back in the fridge and serve once fully set.

One of the most interesting was a 70th birthday party in the Hastings Opera House which began with an afternoon tea and ended with a dinner dance. To complement the pretty vintage

china, crystal and silverware, Maureen also has hollow stemmed champagne glasses, lolly jars, cupcake stands and special wedding cake stands. Everything for that elegant, breath-taking special occasion, where beautiful fine china not only sets the scene but is also a treat to use. “It's great to meet so many people doing such nice things,” Maureen says. HEAVENLY combination Chicken thighs stuffed with ricotta, dried fruit, nuts and wrapped in salty sweet prosciutto then roasted is a great combination. Cranberries work well in this instead of the apricots if you prefer and can look very festive with the green of the pistachios.

PAN SEARED CHICKEN THIGHS WITH AN APRICOT AND PISTACHIO STUFFING WRAPPED IN PROSCIUTTO WITH KUMARA Ingredients: 200g ricotta 3 Tbsp fresh white breadcrumbs 1 large clove garlic, peeled and crushed 1 Tbsp chopped thyme 4 Tbsp dried apricots chopped 4 tbsp pistachios chopped Salt and freshly ground black pepper 6 free-range boneless, skinless chicken thighs 4 slices of prosciutto 2 Tbsp oil Photography – Alan Gillard Method: Preheat the oven to 180°C. In a bowl mix ricotta, breadcrumbs, garlic, chopped thyme, apricots, pistachios, 1/2 a teaspoon of salt and a few grinds of black pepper. Taste the mixture and make sure that it has enough seasoning. Place each thigh between two pieces of glad wrap and bash to flatten out so that each thigh is even in thickness. Spread ricotta mixture over meat, and then roll up. Then roll a piece of prosciutto around each thigh and set aside. The chicken thighs can be prepared ahead of time and kept in the fridge but bring to room temperature before cooking. Heat a large non-stick frying pan over medium heat and add the oil. Once it is sizzling, add the chicken and turn every 2 minutes until is nice and golden on all sides. Remove the chicken parcels onto a roasting tray, place into the hot oven and cook for 15 – 20 minutes or until just cooked through. Rest covered loosely with foil for at least five minutes before slicing and serving. 50 May 7, 2015 Metropol

KUMARA PUREE Ingredients: 700g peeled kumara 1 teaspoon salt plus extra for serving 150g melted butter 50mls warm milk Method: Cut the kumara into even sized chunks, cover with cold water and add salt. Bring to the boil and cook until soft. Drain well and allow to steam dry. Place in a food processor with the melted butter. Process to a smooth puree, slowly adding warm milk to create a silky consistency. Season with salt if necessary.

QUINCE JUS Ingredients: 750 ml good quality chicken stock 1/2 cup white wine 1 – 2 Tbsp quince jelly 1 Tbsp chicken glaze (we use Foundation Foods) Method: Bring the stock, wine, jelly and glaze to the boil and then simmer rapidly until reduced by 3/4 - about 45 minutes. Continue to reduce until viscous and coating the back of a spoon. Keep warm and serve. To Plate and Serve: Spoon kumara puree into the centre of 6 warmed plates and top with the sliced chicken and a few greens to the side. Spoon over the jus and eat immediately.

he popular studio is the brain child of Louisiana native Amanda Anthony, who experienced the concept in her home town and has set up the Christchurch operation from scratch. “It's a fun thing to do with friends, and a good way to meet people in our postquake city,” she says. “Trying something new and out of your comfort zone seems

daunting for most people, that's why we have created a relaxing atmosphere for our customers to get in touch with their inner artist. It's art therapy with a social side.” Each session has a different painting. Just choose a painting from their website (www.paintnsip.co.nz) and make a booking. New paintings are added monthly and change with the seasons. Flowers for Mother's Day, autumn themed

paintings for May, snowy landscapes for the coming winter months, Christchurch icons and more. You can even attend Paint Your Pet Night and wine glass painting sessions. All ages can enjoy Paint 'n' Sip Studio; so far the range has been from 2.5 to 87. They have kids' sessions over school holidays, host private events for birthday parties, hen's parties, team building, etc. and have gift vouchers available. Everything needed for the art work is provided, from aprons to brushes, paints and canvases. Just arrive 15 minutes early, buy a wine, enjoy a complimentary nibble and mix and mingle before the two hour session starts. 2015 Canterbury Wine Awards Wines of Canterbury recently announced the results of the 2015 Canterbury Wine Awards. The event is now in its fourth year and this year saw a record number of wineries enter their wines for judging. Fifty-five medals: five Gold, sixteen Silver and thirtyfour Bronze medals were awarded for this year's show, with 71% of the wines entered earning medals.

ines are judged on their own merits, as well as evaluations with reference to seven food classes; Lamb, Game, Cheese, Pork, Vegetarian, Seafood and Chicken. Universally it is an action which unites us, and I have long been a believer in the concept that 'language is the means through which the future is already written. It is also the means through which it can be rewritten.'

It communicates who we are. And architecture is a tangible realisation of all of this. The world over, as you go in and out of cities you get an understanding of the people, the way they live and what makes them unique, through the built environment. As we look at the many debates going on around the city about the future of our architectural landscape, it is
